FishSki Provisions was founded in 2016 by Rob and Tania McCormack and produces its foods in Alcalde, New Mexico. The couple turned the meals they cooked on fishing, rafting and ski trips into a business after friends encouraged them to share the recipes. Their approach pairs Southwestern flavor with straightforward preparation for home kitchens and outdoor trips. At least 3% of sales supports conservation and recreational access projects, connecting the food to the landscapes that inspired it.

Blue Corn Grits, Heirloom & Coarse Ground, 1.5 lb: Product Details

Bring the color and texture of Southwestern heirloom corn to your kitchen with these plain blue corn grits. Grown and milled by the Ute Mountain Ute Tribe in the Four Corners region, the coarse-ground corn is packed in New Mexico under Mega Mesa Foods, a FishSki Provisions subsidiary. The 1.5 lb resealable bag contains unseasoned grits, giving you a base to prepare with water, stock, milk or cream.

Features

Flavor, Features and Serving Ideas

  • U.S.-grown and milled heirloom blue corn.
  • Coarse-ground texture for slow-simmered grits.
  • Plain formulation with no added peppers, cheese or spices.
  • 1.5 lb bag with a resealable closure.

Choose blue corn when you want a distinctive color as well as a different starting point for a grits dish. Because the grain is unseasoned, you can decide how much salt, dairy or spice to add. It works as a base for shrimp and grits, alongside roasted vegetables, or with an egg at breakfast. Those serving suggestions are optional additions rather than ingredients included in the bag.

Try a small batch simply seasoned first so you can get to know the corn's flavor and coarse texture. For a richer bowl, use milk or cream as directed on the package; for a savory side, choose a stock that suits your meal. Keep the cooking liquid at a gentle simmer and stir to help the grits cook evenly. The blue variety needs more cooking time than the plain yellow variety in this range, so leave room in your meal plan for the grain to soften.
