Big Fork Brands was founded in 2011 by husband-and-wife team Lance and Ann Avery in Chicago, Illinois. Chef Lance combined his Iowa upbringing with his Chicago culinary experience to develop bacon sausage and later expand into pork snacks and Chicago-inspired sauces. The family-owned business puts flavor first and emphasizes distinctive recipes and relationships with small family farms. Its pork sourcing centers on heritage hogs raised outdoors in Iowa, reflecting the founders’ interest in how their food is raised as well as how it tastes.
Try the full five-flavor bacon sausage lineup in one freezer-ready assortment. The collection contains five 12 oz packs with four links per pack, giving you twenty links and 3.75 lb total.
The assortment includes Hickory & Applewood, Aged Cheddar, Maple & Brown Sugar, Chicken & Bacon, and Spicy 3-Pepper. It is a fixed tasting collection with one pack of each flavor, making it a useful way to compare breakfast-friendly sweetness, classic smoke, cheese, poultry-and-bacon, and chili heat.
The packs are labeled fully cooked and crafted in Chicago. They combine uncured hardwood-smoked bacon with pork, or with chicken in the Chicken & Bacon recipe. The supplier’s pork program uses heritage hogs raised outdoors in Iowa. The finished sausage production location and the farm location are separate facts: Chicago is in Illinois, while the hog source is Iowa.
Plan different meals around the individual packs: Maple & Brown Sugar for brunch, Aged Cheddar for a bun, and Hickory & Applewood for pasta or beans. The assortment gives you several distinct recipes, so keep the original packaging with each flavor when dividing the order. Aged Cheddar contains milk, and Chicken & Bacon still contains pork bacon.
Hickory & Applewood: Antibiotic-free Berkshire pork, uncured hardwood smoked bacon, water, corn flour, sea salt, brown sugar, natural flavors, and celery powder.
Aged Cheddar: Antibiotic-free heritage pork, uncured hardwood smoked bacon, natural cheddar cheese, water, corn flour, sea salt, brown sugar, natural flavors, and celery powder. Contains milk.
Maple & Brown Sugar: Antibiotic-free Berkshire pork, uncured hardwood smoked bacon, water, corn flour, brown sugar, maple syrup, natural flavors, sea salt, and celery powder.
Chicken & Bacon: Antibiotic-free chicken tenders, uncured hardwood smoked bacon, water, corn flour, sea salt, brown sugar, natural flavors, and celery powder.
Spicy 3-Pepper: Antibiotic-free Berkshire pork, uncured hardwood smoked bacon, jalapenos, water, corn flour, sea salt, brown sugar, spices, natural flavors, and celery powder.
Allergen note: Aged Cheddar contains milk. In the single-flavor six-pack, that applies when Aged Cheddar is selected; the five-flavor collection includes it. All five recipes contain corn flour, and the Chicken & Bacon recipe also contains pork bacon. No blanket milk-free, grain-free, or strict paleo claim is made.
Crafted in Chicago, Illinois, United States, shown on the matched sausage pack fronts and corroborated by the supplier’s Chicago-made sausage statement. Pork is sourced from Iowa heritage hogs; all ingredient-growing origins are not established.
Keep frozen or refrigerated as the package directs. Supplier guidance allows frozen storage for up to six months; once properly thawed and kept refrigerated, unopened bacon sausage is stated to keep for six weeks. Use within four days after opening, and obey any earlier date printed on the pack.
Arrange delivery for a time when someone can put the packs into cold storage promptly. Check the package condition and temperature on arrival. For handling guidance, see the USDA guide to mail-order food safety; do not taste a suspect warm shipment.
Big Fork ships these meats frozen from Chicago in an insulated shipping cooler with dry ice and ice packs. Its published policy schedules frozen orders early in the week, generally Monday or Tuesday; the product pages emphasize Tuesday and allow Wednesday or Thursday dispatch for one-day routes. Holidays, weather, or other conditions may delay dispatch when the supplier considers shipment unsafe. Tracking accompanies shipments. Destination eligibility, the delivery service, and the actual shipping charge are determined at checkout; no arrival date or free-shipping threshold is promised here.
For a BuyAmerican order, contact hello@buyamerican.com promptly about damage, an incorrect item, or another problem and obtain instructions before sending goods. BuyAmerican’s refund policy excludes perishable food returns. Big Fork separately publishes a 30-day-from-purchase satisfaction/refund policy subject to unused condition, original packaging, proof of purchase, and photographs; it does not offer food exchanges, and perishable sausage cannot be physically returned. Supplier terms are provided as fulfillment background, not as a replacement for BuyAmerican’s order policy. Approval is required before any refund or authorized return, and neither a refund nor free return postage is automatic.
Read the BuyAmerican refund and returns policy for the order process. A supplier’s published terms do not authorize an unsolicited return shipment.
